If I correctly understand your question, you have a 3D variable and you would like to visualize a vertical slice of the variable, correct? You can do this with the Probe tool.
There is an example of this in the Hurricane Katrina Tutorial (http://www.vapor.ucar.edu/tutorials/hurricane-katrina-tutorial). Near the end ("Use the probe to insert streamlines in the eye wall") there is a vertical profile of the W variable shown in the probe. Is this the kind of vertical profile you want? If not please clarify.
